Jacob Pollock is in his second season as assistant coach at USF where he will coach tight ends.
In 2018, Pollock was the running backs coach for USF, which had the fifth-ranked rushing attack in NCAA DII and led the NSIC with 274.2 yards per game. He was also part of an offensive staff that helped orchestrate the 19th ranked unit nationally and first in the NSIC at 466.5 yards per game. Pollock coached Harlon Hill Trophy finalist (fifth in balloting) Gabriel Watson, who led NCAA DII in rushing TDs with 26 and rushing yards per game at 177.9. He finished with a school-record 1,957 rushing yards (second in DII) with 269 carries. Watson, who was the NSIC Offensive Player of the Year, had 11 straight games of 100 yards or more, which was a school record. Named to five All-American teams (all first team), he also set the game record with 320 yards on 19 carries with five TDs in a win over Minnesota State Moorhead. Watson, who had three games of 200 yards or more, led the NSIC in rushing and had the top rushing average of 7.3 yards per carry, while his running mate in the backfield Colton Myles finished sixth in the league with 117 carries for 731 yards and five TDs. He averaged 6.2 yards per carry and with Watson had a combined 13 100-yard rushing games (Watson, 11; Myles, 2). Both Watson and Myles earned All-NSIC honors. Watson was also named the Super Region 4 Offensive Player of the Year.

Prior to joining the USF staff, Pollock was an assistant coach at UW-Stout from fall of 2015 to spring of 2018. He coached two second-team All-Wisconsin Intercollegiate Athletic Conference (WIAC) receivers in Brian Alvarez in 2015 and Kevion McDonald in 2017. He also served as assistant video coordinator, assistant on-campus recruiting coordinator, and study table coordinator while at UW-Stout. Pollock was the UW-Stout junior varsity offensive coordinator with a 3-1 record.
At UW-Stout, he founded a student organization (Men in Education) which led to presentations at various professional development conferences.Â
A native of Litchfield, Minn., Pollock played wide receiver at UW-Stout from 2012-14. He graduated from UW-Stout with a Bachelor of Science degree in Early Childhood Education and a coaching minor in May, 2016. At Litchfield High, he played Football and Basketball. Â
